Our favourite veg-box recipes

Our markets have always been the best place in Ely to find top-quality fruit and vegetables. During these uncertain times, we’ve had to make the difficult decision to temporarily close. Luckily, some of our traders are still able to deliver a fresh box of delicious fruit and vegetables straight to your door. Here are our favourite recipes to make use of all that lovely produce.

Simple vegetable soup

This recipe makes use of parsnips, potatoes and carrots. The double cream is an optional extra ­– the recipe is just as good without it. Add a teaspoon of curry powder to give your soup a warm spicy flavor.

A great budget-friendly curry that’s great for feeding a big family. Good for using up aubergines and butternut squash. Save a few portions for the freezer!

Courgette and bacon pasta

A quick midweek meal that’ll use up those courgettes lurking in your fridge. Save your leftovers for pasta salad the next day.

Roasted tomatoes

If you’ve got some big tomatoes in your vegetable box, try roasting them to really bring out their flavour. Blitz for an easy pasta sauce, or serve on toasted sourdough bread.

You can’t beat an old-fashioned apple crumble. It’s just the comfort we all need right now. Mix up your fruits – plums, pears and rhubarb are also lovely.
